Thai Noodles with Ground Pork
INGREDIENTS
- 1 pound Coleman Natural ground pork
- 1 package wide rice noodles
- 1 tablespoon oil
- 4 tablespoons soy sauce
- 2 tablespoons chili garlic sauce
- 2 tablespoons lime juice
- 1/2 cup edamame
- 1/2 cup red bell peppers, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
INSTRUCTIONS
1 Cook rice noodles according to instructions on package. Drain and set aside.
2 Meanwhile, heat oil in a large, heavy-bottomed skillet over medium-high heat until it shimmers. Add ground pork and using a spoon, break up the pork into small pieces as it cooks.
3 When pork is almost cooked through, add the soy sauce, garlic chili sauce and a pinch of pepper to the pan, stirring until ingredients are well mixed. Continue to cook for 3-4 minutes until the pork has been cooked through and the sauce has reduced.
4 Remove from heat and add the bell pepper slices, cilantro and freshly squeezed lime juice.
5 Add rice noodles to the pan and stir to combine until noodles are coated with sauce and pork mixture.
6 Spoon into shallow bowls. Garnish with chopped peanuts and lime wedges if using. Serve immediately.
