Thai Noodles with Ground Pork

INGREDIENTS

  • 1 pound Coleman Ground Pork
  • 1 package wide rice noodles
  • 1 tablespoon oil
  • 4 tablespoons soy sauce
  • 2 tablespoons chili garlic sauce
  • 2 tablespoons lime juice
  • 1/2 cup edamame
  • 1/2 cup red bell peppers, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

INSTRUCTIONS

  1. Cook rice noodles according to instructions on package. Drain and set aside.
  2. Meanwhile, heat oil in a large, heavy-bottomed skillet over medium-high heat until it shimmers. Add ground pork and using a spoon, break up the pork into small pieces as it cooks.
  3. When pork is almost cooked through, add the soy sauce, garlic chili sauce and a pinch of pepper to the pan, stirring until ingredients are well mixed. Continue to cook for 3-4 minutes until the pork has been cooked through and the sauce has reduced.
  4. Remove from heat and add the bell pepper slices, cilantro and freshly squeezed lime juice.
  5. Add rice noodles to the pan and stir to combine until noodles are coated with sauce and pork mixture.
  6. Spoon into shallow bowls. Garnish with chopped peanuts and lime wedges if using. Serve immediately.
