Bacon Wrapped Halibut
- 4, 6-oz.halibut fillets, skin removed
- 8 slices Coleman Natural Bacon
- 1 tablespoon canola oil
- Salt and pepper to taste
Season the halibut with salt and pepper, then wrap each filet along the shorter side with two pieces of bacon, tucking the ends underneath to hold them in place.
In a large, nonstick skillet, heat oil over medium-high heat.
Add the fish and cook, turning once, until the bacon is crisp, about 5 minutes on each side.
Serve the fish with your favorite side dish, rice or a salad.
