Bacon Wrapped Halibut

- 4, 6-oz halibut fillets, skin removed
- 8 slices Coleman Natural Bacon
- 1 tablespoon canola oil

2 Season the halibut with salt and pepper, then wrap each filet along the shorter side with two pieces of bacon, tucking the ends underneath to hold them in place.
3 In a large, nonstick skillet, heat oil over medium-high heat.
4 Add the fish and cook, turning once, until the bacon is crisp, about 5 minutes on each side.
5 Serve the fish with your favorite side dish, rice or a salad.
