Kielbasa and SauerKrat Reuben Sandwich

The classic Reuben gets a facelift with kielbasa sausage instead of traditional pastrami, and smoked gouda cheese instead of swiss. These sandwiches are ready to eat in just 15 minutes, equally suitable for a summer’s day or a chilly afternoon. Make sure your rye bread is cut on the thicker side, so it can hold up to that Polish kielbasa and gooey melted cheese. Goes well with pickles, potato salad or coleslaw!

INGREDIENTS

For the sandwiches
  • 1 package Coleman Polish Kielbasa Uncured Sausage, sliced horizontally in 4” lengths or into ½” coins
  • 2 tablespoons butter
  • 8 slices rye bread
  • 8 slices smoked gouda cheese
  • 2 cups sauerkraut, drained
  • 1 cup Thousand Island dressing

INSTRUCTIONS

  1. Preheat a large skillet or griddle on medium heat.
  2. Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing.
  3. On 4 bread slices, layer 1 slice of the cheese, 4 slices or 8 coins of the kielbasa, 1/4 cup sauerkraut and second slice of cheese. Top with remaining bread slices, buttered sides out.
  4. Grill sandwiches until both sides are golden brown, about 5 minutes per side.
  5. Serve hot.
  6. Makes 4 sandwiches.
