Bacon Cheeseburger Tacos (keto-friendly)

Ingredients

8-10 slices bacon

1 lb. ground beef

1 cup canola oil

8 corn tortillas

1 medium red onion, sliced

1 avocado, removed from its skin and sliced

1 medium tomato, chopped

8-10 romaine lettuce leaves, torn

Optional: Pickle chips, ketchup, mustard and mayonnaise for serving

Instructions

  1. In a large frying pan or cast-iron skillet, cook bacon until crispy. Remove slices from skillet to drain on a paper towel. Pour bacon fat from pan.
  2. Meanwhile, shape ground beef into 4 burger patties. Season both sides of patties with salt and pepper. Add burger patties to skillet over medium-high heat. Cook about 4 minutes per side for medium. Top each burger with a slice of cheese then cover skillet with a lid and cook until cheese has melted. Remove from heat. 
  3. In a smaller skillet, heat canola oil until very hot but not smoking. Quickly cook tortillas in the oil turning once and removing from pan within a minute. Drain on paper towels to remove any excess oil.
  4. To build each taco, slice burgers and cooked bacon slices in half. Top each tortilla with half a burger and bacon, lettuce, tomato and avocado. Serve with pickles, ketchup, mustard and mayonnaise if desired.
