Apple Cinnamon French Toast Bake with Sweet Bacon Crumble
- 1 12-ounce package (4 sausages) Coleman Organic Apple Chicken Sausage, cut on the bias into ½” slices
- 12 slices of white bread
- 8 eggs, slightly beaten
- 2 cups milk
- ¼ cup sugar
- ¼ cup brown sugar
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg
- 1 apple, cored and diced into ¼” pieces
Sweet Bacon Crumble
- 6 Coleman Natural Uncured Bacon slices, cooked and diced
- ½ cup flour
- ½ cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup butter, cold and cut into pieces
Preheat the oven to 350°F.
Chop the bread into 1” pieces and set aside.
In a large mixing bowl, combine the eggs, milk, sugars, spices, apple pieces and sausage and stir to combine well.
Toss in the bread cubes and mix well. Let rest for 10 minutes to allow the liquid to soak into the bread.
Pour the mixture into a 13”x 9” casserole pan and spread to evenly fill the pan.
Place the crumble ingredients into a food processor and pulse for about 10 seconds. Sprinkle the crumble over the bread and egg mixture.
Bake for 45-50 minutes until the top is crispy and the center is no longer wet.
