Apple-Cinnamon French Toast Bake With Sweet Bacon Crumble




1 12-ounce package (4 sausages) COLEMAN ORGANIC® Apple Chicken Sausage, cut on the bias into ½” slices

12 slices of white bread

8 eggs, slightly beaten

2 cups milk

¼ cup sugar

¼ cup brown sugar

2 teaspoons cinnamon

¼ teaspoon nutmeg

1 apple, cored and diced into ¼” pieces


Sweet Bacon Crumble

6 COLEMAN NATURAL® Uncured Hickory Smoked Bacon slices, cooked and diced

½ cup flour

½ cup brown sugar

1 teaspoon cinnamon

1/4 cup butter, cold and cut into pieces



  • Preheat the oven to 350 degrees.
  • Chop the bread into 1” pieces and set aside.
  • In a large mixing bowl, combine the eggs, milk, sugars, spices, apple pieces and sausage and stir to combine well.
  • Toss in the bread cubes and mix well. Allow to rest for 10 minutes to allow the liquid to soak into the bread.
  • Pour the mixture into a 13”x 9” casserole pan and spread to evenly fill the pan.
  • Place the crumble ingredients into a food processor and pulse for about 10 seconds. Sprinkle the crumble over the bread and egg mixture.
  • Bake for 45-50 minutes until the top is crispy and the center is no longer wet.
