Quick Protein and Potato Skillet
Dairy-Free Gluten-Free Whole30
- 2 tablespoons olive oil
- 1 cup Yukon gold potatoes, diced
- 1/2 cup onion, diced
- 1 pound Coleman Natural Ground Sausage (regular or hot)
- 1/2 cup red bell pepper, diced
- 1 tablespoon chives, chopped
- 4-6 eggs
1 Heat olive oil in a medium-sized saute pan. Add potatoes and cook for 4-5 minutes.
2 Add onions and cook for 2 more minutes.
3 Add red peppers and sausage, cooking for 5 to 8 more minutes, until sausage is cooked through.
4 Meanwhile fry eggs to your liking.
5 Top each serving with fried eggs and garnish with chopped chives.
