Orzo Salad with Ham

INGREDIENTS

  • 8 oz. Coleman Natural Ham, chopped into 1/2 inch pieces (or leftover sliced ham)
  • 2 cups water
  • 1 cup orzo
  • 1/2 green onion
  • 1 cup tomatoes
  • 1 cup fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice

Use your instant pot to cook the orzo!

INSTRUCTIONS

1 Watch this step-by-step video or get started below.

2 Cook orzo according to package directions and rinse with cold water.

3 While the orzo is cooking, chop the green onions, tomatoes and parsley.

4 Place 1/2-inch pieces of ham in a heavy skillet over medium-high heat, stirring occasionally, to brown slightly on all sides. Set aside and allow to cool.

5 In a large bowl combine all the ingredients. Cover and chill in refrigerator for approximately one hour. Stir and serve it cold.

Tip
This salad can be made up to 8 hours in advance.
