Orzo Salad with Ham
- 8 oz. Coleman Natural Ham, chopped into 1/2 inch pieces (or leftover sliced ham)
- 2 cups water
- 1 cup orzo
- 1/2 green onion
- 1 cup tomatoes
- 1 cup fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice

Cook orzo according to package directions and rinse with cold water.
While the orzo is cooking, chop the green onions, tomatoes and parsley.
Place 1/2-inch pieces of ham in a heavy skillet over medium-high heat, stirring occasionally, to brown slightly on all sides. Set aside and allow to cool.
In a large bowl combine all the ingredients. Cover and chill in refrigerator for approximately one hour. Stir and serve it cold.
