INGREDIENTS

  • 12 ounces Coleman Uncured Ham Steak
  • 1/4 cup white onion
  • 2 tablespoons dill pickles and 1 tablespoon pickle juice
  • 2 tablespoons celery
  • 1 tablespoon stone ground mustard
  • 1/4 cup mayonnaise
  • Chives

INSTRUCTIONS

  1. Cut the ham into large chunks and pulse in a food processor to mince, taking care not to over-process the meat, or alternatively, chop finely by hand.
  2. Mince onion, celery and dill pickles.
  3. Place the minced ham in a medium bowl and add the onion, pickles, pickle juice, celery, mustard, and 1/4 cup of mayonnaise. Mix together.
  4. Taste and add more mayonnaise if desired, then season with cracked black pepper.
  5. Refrigerate until ready to serve. Garnish with minced chives.
