Bacon Wrapped Honey Roast Pork Loin
INGREDIENTS
- 1 Coleman Natural Original Marinated Pork Loin Filet
- 8-10 Slices Coleman Natural Hickory Smoked Uncured Bacon
- 1/4 cup Honey, warm
INSTRUCTIONS
1 Preheat oven to 400 degrees F. Line the bottom of a roasting pan with foil. Place pan rack on top.
2 Lay out 8 to 10 slices of raw bacon lengthwise in a line, overlapping slightly, down the center of the roasting rack.
3 Season pork loin with salt & pepper. Place on the center of the rack on top of the bacon slices.
4 One by one, wrap each bacon slice over the top of the pork loin. You should have enough slices to completely cover the roast except the ends.
5 When finished, gently flip the roast over so the bacon ends are underneath, which secures them.
6 Drizzle warm honey over the top of the roast, using a brush to evenly distribute.
7 Place roast on center oven rack and bake for 30-40 minutes.
8 Check internal temperature with a meat thermometer. If not fully cooked to 145 degrees F, continue roasting in 5 minute increments until desired internal temperature is reached. Cook time will be longer or shorter depending on the thickness of the roast. Adjust accordingly.
9 Remove cooked roast from the oven and let rest for 5 minutes before carving. Serve with your favorite side. We like herb roasted new potatoes.
