Bacon Wrapped Honey Roast Pork Loin
- 1 Coleman Natural Original Marinated Pork Loin Filet
- 8-10 Slices Coleman Natural Hickory Smoked Uncured Bacon
- 1/4 cup Honey, warm
Preheat oven to 400 degrees F. Line the bottom of a roasting pan with foil. Place pan rack on top.
Lay out 8 to 10 slices of raw bacon lengthwise in a line, overlapping slightly, down the center of the roasting rack.
Season pork loin with salt & pepper. Place on the center of the rack on top of the bacon slices.
One by one, wrap each bacon slice over the top of the pork loin. You should have enough slices to completely cover the roast except the ends.
When finished, gently flip the roast over so the bacon ends are underneath, which secures them.
Drizzle warm honey over the top of the roast, using a brush to evenly distribute.
Place roast on center oven rack and bake for 30-40 minutes.
Check internal temperature with a meat thermometer. If not fully cooked to 145 degrees F, continue roasting in 5 minute increments until desired internal temperature is reached. Cook time will be longer or shorter depending on the thickness of the roast. Adjust accordingly.
Remove cooked roast from the oven and let rest for 5 minutes before carving. Serve with your favorite side. We like herb roasted new potatoes.
