INGREDIENTS
1-2 slices
Coleman Hickory Smoked Uncured Bacon
2-4 eggs, beaten
1 Tablespoon olive oil
1 small shallot, chopped
1/2 cup mushrooms, sliced
1 green onion, sliced
Gruyère cheese, grated
INSTRUCTIONS
Preheat oven to 375 degrees F.
In a skillet, heat olive oil on medium heat and cook the sliced bacon until crispy.
Add chopped shallots, mushrooms, a pinch of salt, and cook until shallots are translucent. About 1-2 minutes.
Oil a baking dish and add sautéed onions, mushrooms, eggs, cooked bacon, sliced green onion, and grated cheese.
Bake for 20-25 minutes until the top of the frittata is golden brown. ⠀
Remove from the oven and let cool for 8-10 minutes before digging in
