INSTRUCTIONS

  1. Preheat oven to 375 degrees F.
  2. In a skillet, heat olive oil on medium heat and cook the sliced bacon until crispy.
  3. Add chopped shallots, mushrooms, a pinch of salt, and cook until shallots are translucent. About 1-2 minutes.
  4. Oil a baking dish and add sautéed onions, mushrooms, eggs, cooked bacon, sliced green onion, and grated cheese.
  5. Bake for 20-25 minutes until the top of the frittata is golden brown. ⠀
  6. Remove from the oven and let cool for 8-10 minutes before digging in
