INGREDIENTS
- 1-2 slicesColeman Natural Hickory Smoked Bacon
- 2-4 eggs, beaten
- 1 Tablespoon olive oil
- 1 small shallot, chopped
- 1/2 cup mushrooms, sliced
- 1 green onion, sliced
- Gruyère cheese, grated
INSTRUCTIONS
1 Preheat oven to 375 degrees F.
2 In a skillet, heat olive oil on medium heat and cook the sliced bacon until crispy.
3 Add chopped shallots, mushrooms, a pinch of salt, and cook until shallots are translucent. About 1-2 minutes.
4 Oil a baking dish and add sautéed onions, mushrooms, eggs, cooked bacon, sliced green onion, and grated cheese.
5 Bake for 20-25 minutes until the top of the frittata is golden brown. ⠀
6 Remove from the oven and let cool for 8-10 minutes before digging in
